Cookbook author coming to Montello on Nov. 5

Michael T. Schaefer was born and raised in Wisconsin. After receiving an associate degree in hotel and restaurant cooking from Milwaukee Area Technical College, he worked as a chef for seven years at Schreiner’s Restaurant in Fond du Lac. When he felt the Lord calling him to community life, he became a member of the Benedictine Abby in Pecos, New Mexico, where wrote Cooking, Pure and Simple in 1985, when he was Brother Nicholas.

At the monastery he worked in the kitchen and the reservations office and travelled to many parts of the country as a member of the abbey’s mission team. He wrote the book at the request of the monastery’s many guests. Cooking, Pure and Simple contains 50 nutritious and delicious recipes ranging from breads and breakfast dishes through appetizers and salads to main dishes and desserts.

All the recipes use natural, unprocessed ingredients served in simple but tasty ways. “More and more we are coming to see that proper care of our bodies is a spiritual responsibility. One of the ways the members of the Pecos Benedictine Abby approach this responsibility is through their preparation of meals.” When Schaefer left the monastery, he came back to Schreiner’s Restaurant where he recently retired as the general manager.

He continues to work on creating recipes that are simple, healthy and quick to prepare. Schaefer will be on hand to talk about his recipes and personalize copies of his cookbook at Readers Realm Gallery on Saturday, Nov. 5 from 11 a.m. to 1 p.m. Readers Realm Gallery of New and Gently-Used Books, Gifts and Whimsy is located in a “grand historic” church at 147 E.
